Miso-glazed salmon
Miso is the slow marinade — the salinity cures the surface of the fish while the koji starts to break down the protein, so a 15-minute rest gives you the caramelized glaze a fresh one would need 24 hours to earn.

Method
4 steps · 25 minutes
- Whisk the miso, soy sauce, sesame oil, erythritol and grated ginger into a smooth paste. Coat the salmon fillets and let them sit for at least 15 minutes, up to an hour.
- Preheat the broiler to high. Line a sheet pan with foil and rub lightly with oil.
- Lay the fillets on the pan. Cook 4 inches from the heat for 6 minutes — the miso will caramelize to a deep brown and the salmon should flake at the thickest point.
- Scatter the sesame seeds and grind pepper over the top. Serve over cauliflower rice with steamed greens.
