Method

- Marinate the thighs in the soy, garlic and pepper for 30 minutes. No salt anywhere in this — the soy is the salt.
- Lift them out and brown them skin down in a dry pan. There is enough fat in the skin.
- Pour the marinade back in with the vinegar and bay, and do not stir for the first 5 minutes. Stirring early keeps the vinegar sharp and raw.
- Simmer covered for 30 minutes, then uncovered for 10 to reduce.
- The sauce should end up dark and barely there, coating the chicken rather than swimming around it.
- Scallions over the top. It is better the next day, which is the point of a braise built on vinegar.
