- Tahini½ oz
- Sesame seeds¼ oz
- Powdered erythritol¼ oz
- Ground cinnamona good pinch

- Stir the tahini in its jar before measuring. It separates hard, and the oil on top and the paste below are very different things.
- Loosen the tahini with a spoonful of the yogurt first, on its own, before combining the rest. Added straight, it seizes into lumps.
- Toast the sesame seeds in a dry pan for a minute until they smell nutty and start to hop.
- Use powdered erythritol. Granulated will not dissolve in cold yogurt and stays gritty.
- The pinch of salt is what stops tahini tasting bitter, and it is the difference between this working and not.
- Cinnamon and the toasted seeds over the top rather than stirred through, so the first spoonful is not the same as the last.
