  • Butter¼ oz

Method

  1. Dice the ham, pepper and onion small and roughly the same size, so they cook in the same time.
  2. Cook the pepper and onion in half the butter until they soften and start to color, a good 5 minutes.
  3. Add the ham for the last minute only, to warm and brown at the edges. Cooked longer it goes tough and squeaky.
  4. Tip the filling out and wipe the pan. Cooking the eggs in the browned bits gives a speckled gray omelette.
  5. Fresh butter, then the beaten eggs, drawing the setting edges in with a fork for 30 seconds.
  6. Filling and cheddar down the middle while the top is still glossy, fold, and slide it out. It finishes on the plate.
