- Do not salt anything in this. Country ham is dry-cured and salty enough to season the gravy on its own.
- Fry the slices in the butter over medium heat, 3 minutes a side, until the edges curl and the fat turns translucent.
- Lift them out and keep them warm. Cooked longer than that, country ham goes from firm to leathery.
- Pour the coffee into the hot pan and scrape everything up as it bubbles.
- Reduce it by about a third. It stays thin — this is a sauce you spoon over, not one that coats.
- Grind pepper in and pour it over the ham. It should taste of ham first and coffee second.
